  • 2 large eggs

  • 1 tablespoon of all-purpose flour
  • 1 egg yolk (for egg wash)
  • A figurine or bean (optional, for the fève)

Step-by-Step Instructions

Step 1: Prepare the Filling

In a mixing bowl, combine the almond meal, sugar, softened butter, two eggs, vanilla extract, and flour. Mix until you have a smooth, creamy filling. Set aside the mixture to let the flavors meld together.

Step 2: Roll Out the Pastry

On a clean, floured surface, roll out one sheet of puff pastry into a round shape approximately 30 cm (12 inches) in diameter. Transfer the rolled pastry onto a baking sheet lined with parchment paper. This will be the base of your galette.

Step 3: Assemble the Galette

Spread the almond filling evenly over the pastry, leaving a 2 cm (0.8 inches) border around the edges. If you wish to include a fève, now is the time to nestle it into the filling. Roll out the second sheet of puff pastry and place it over the filling, pressing the edges to seal. Use a fork or your fingers to crimp the edges, ensuring the galette stays intact while baking.

Step 4: Create the Design

To give the galette its signature look, use a sharp knife to create a decorative pattern on the top. Be sure not to cut through the pastry. Finally, brush the surface of the galette with a beaten egg yolk to give it a golden finish.

Step 5: Bake the Galette

Preheat your oven to 200°C (400°F) and bake the galette for 25 to 30 minutes, or until it's golden brown and puffed. Keep an eye on it to avoid over-browning.

Step 6: Cool and Serve
