Ingredients

To create a stunning crème brûlée, you'll need the following ingredients:

  • 2 cups heavy cream
  • 1 cup milk
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 cup brown sugar (for topping)

Instructions

1. Prep the Oven and Ramekins

Preheat your oven to 325°F (163°C). Choose your ramekins (about 6 oz. each) and place them in a baking dish with high sides. This will make it easier to add water later during baking.

2. Heat the Cream and Milk

In a medium saucepan, combine the heavy cream and milk. Gently heat the mixture over medium heat until it is just about to simmer. Make sure not to boil it, as that can affect the texture.

3. Whisk the Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. This should take about 2-3 minutes. Then, add the vanilla extract and mix to combine.

4. Combine the Mixtures

Once the cream and milk mixture is heated, slowly pour it into the egg yolk mixture while whisking constantly. This technique, called tempering, prevents the eggs from curdling. Continue whisking until everything is well combined.

5. Strain the Mixture

To ensure a smooth custard, strain the mixture through a fine-mesh sieve into a large measuring cup or bowl. This step will remove any bits of cooked egg.

6. Fill the Ramekins

Carefully pour the custard into the prepared ramekins, filling them about 3/4 full. Use a ladle or a measuring cup to avoid spills.

7. Create a Water Bath

Place the baking dish in the oven and carefully pour hot water into the dish until it reaches halfway up the sides of the ramekins. This water bath helps cook the custard evenly and prevents it from cracking.

8. Bake the Custards

Bake in the preheated oven for about 30-40 minutes or until the custards are just set but still slightly jiggly in the center. Remove them from the oven and water bath and let them cool to room temperature.

9. Chill the Custards

Once the ramekins are cool, cover them with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This sets the custard perfectly.

10. Caramelize the Sugar

Before serving, sprinkle an even layer of brown sugar over the chilled custards. Use a kitchen torch to caramelize the sugar until it bubbles and turns golden brown. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.

11. Let it Cool

Allow the caramelized sugar to cool for a minute before serving. This creates that satisfying crack when you tap into it with a spoon!
