1. Chicken Fried Rice

  • 2 cups cooked rice (preferably leftover)
  • 1 cup diced chicken breast
  • 1/2 cup peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Green onions for garnish

Instructions:

  1. Heat 1 tablespoon of oil in a pan over medium heat.
  2. Add the chicken, stirring until cooked through. Remove and set aside.
  3. In the same pan, add the remaining oil and sauté the peas and carrots for about 2 minutes.
  4. Push the vegetables to one side, pour in the beaten eggs, and scramble until cooked.
  5. Add the rice and chicken back to the pan, pour in the soy sauce, and mix well. Cook for another 2-3 minutes.
  6. Garnish with green onions and serve hot!

  3. Stir in the oyster sauce and soy sauce, mixing well. Cook for another 2 minutes.
  4. Serve hot over rice or noodles!

Ingredients:

  • 8 oz lo mein noodles
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon green onions, chopped

Instructions:

  1. Cook the lo mein noodles according to package instructions, then drain and set aside.
