Step 1: Prepare the Scallions

Start by washing the scallions thoroughly under running water to remove any dirt. Pat them dry with a paper towel. Trim off the root ends and cut the scallions into small pieces, about 1-inch long. The more finely you chop the scallions, the more flavor will be extracted into the oil.

Step 2: Heat the Oil

In a small saucepan, combine the neutral oil and sesame oil (if using). Heat the oil over medium-low heat. It’s essential to monitor the temperature closely; you want the oil to be hot but not smoking. A temperature between 250°F to 300°F (121°C to 149°C) is ideal for infusing the flavors without burning the scallions.

Step 3: Infuse the Scallions

Once the oil is heated, add the chopped scallions to the pan. Stir gently and let the scallions cook in the oil. You will notice them sizzle and start to release their aroma. Continue to cook for about 5 to 10 minutes, or until the scallions turn golden brown. Be careful not to let them burn, as this will impart a bitter taste.

Step 4: Strain the Oil

After the scallions are nicely golden and fragrant, remove the saucepan from the heat. Allow the oil to cool for a few minutes.
