Instructions

Step 1: Prepare the Tofu

Start by draining the tofu. Wrap it in a clean kitchen towel and press gently to remove excess water. Once dried, cut the tofu into small cubes. This will help it absorb the flavors of the soup.

Step 2: Sauté the Aromatics

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant. Be careful not to burn them, as this can affect the flavor of the soup.

Step 3: Add the Vegetables

Add your mixed vegetables to the pot. Stir-fry them for about 3-5 minutes until they start to soften. If you prefer a crunchier texture, you can skip this step or reduce the cooking time.

Step 4: Pour in the Broth

Now, pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.

Step 5: Add the Tofu and Seasoning

Gently add the cubed tofu to the pot. Stir in the soy sauce, and season with salt and pepper to taste. If you prefer a thicker soup, mix the cornstarch with a little water to create a slurry, then add it to the soup. Allow it to thicken slightly, stirring occasionally.

Step 6: Simmer the Soup

Let the soup simmer for another 10-15 minutes to allow the flavors to meld together. During this time, check for seasoning and adjust as necessary.
