How to Make Homemade Puff Pastry from Scratch

  • ½ cup cold water

Step-by-Step Instructions

Step 1: Prepare the Dough

In a large mixing bowl, combine the flour and salt. Mix them together until well combined. Next, add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs. Be careful not to overwork the butter; you want to leave some larger pieces for the flaky texture.

Step 2: Add Water and Form the Dough

Gradually add the cold water to the flour-butter mixture, stirring gently until the dough begins to come together. If the dough is too dry, add a little more water, a tablespoon at a time. Once combined, turn the dough out onto a lightly floured surface and knead it gently a couple of times until smooth. Shape it into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 3: Roll and Fold

After the dough has chilled, remove it from the refrigerator. On a floured surface, roll the dough into a rectangle about ¼ inch thick. Ensure the edges are even for best results. Once rolled, fold the dough into thirds like a letter. This process is referred to as a 'single turn.' Wrap the folded dough in plastic wrap and refrigerate for another 30 minutes.

Step 4: Repeat the Process

Remove the dough from the refrigerator and repeat the rolling and folding process two more times for a total of three single turns. Each time you roll out the dough, it should become more elastic and easier to work with. After completing the third turn, wrap the dough again and chill for at least one hour, or overnight for best results.

Step 5: Use Your Puff Pastry

Your homemade puff pastry is now ready to be used! Roll it out to your desired thickness, and cut it into shapes for your recipes. Whether you’re making tarts, turnovers, or puff pastry shells, this flaky dough will add an impressive touch to your culinary creations.
