  • 2 tablespoons active dry yeast
  • 1 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • ½ cup powdered sugar
  • 1 teaspoon almond extract
  • ¼ cup slivered almonds for topping

Instructions

Step 1: Prepare the Dough

In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. In a large mixing bowl, combine flour and salt. Add the frothy yeast mixture, eggs, and vanilla extract. Mix until a dough forms.

Step 2: Knead and Chill

Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Form it into a ball, place it in a greased bowl, and cover it with plastic wrap. Let it rise in a warm place for about 1 hour or until it doubles in size.

Step 3: Prepare the Butter Layer

While the dough is rising, prepare the butter layer. Place the cold, cubed butter between two sheets of parchment paper. Using a rolling pin, pound and roll it into a rectangle about ¼ inch thick. Refrigerate this butter layer until ready to use.

Step 4: Laminate the Dough

Once the dough has risen, turn it out onto a floured surface and roll it into a rectangle, approximately 16x12 inches. Place the butter layer in the center of the dough and fold the sides over to encase the butter. Roll it out into a 20x10 inch rectangle. Fold it into thirds like a letter and refrigerate for 30 minutes. Repeat this rolling and folding process two more times for a total of three folds.

Step 5: Shape the Croissants

After the final fold, roll the dough out to about ¼ inch thick. Cut the dough into long triangles. At the wide end of each triangle, place a small spoonful of almond cream made from mixing almond flour, powdered sugar, and almond extract. Roll each triangle from the wide end to the point, forming the croissant shape.

Step 6: Final Rise and Bake

Place the shaped croissants on a baking sheet lined with parchment paper. Cover them with a clean kitchen towel and let them rise for about 1 hour. Preheat your oven to 375°F (190°C). Before baking, brush each croissant with an egg wash (1 beaten egg with a splash of water) and sprinkle slivered almonds on top.
