Instructions:

1. Cook the Chinese egg noodles according to package instructions. Drain and set aside.

2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add chopped scallions and minced garlic, and sauté until fragrant.

3. Add the ground pork to the skillet and cook until browned and cooked through.

4. In a small bowl, mix together soy sauce, Chinese black vinegar, sesame oil, Sichuan peppercorn powder, chili oil, soybean paste, chicken broth, sugar, and salt.

5. Pour the sauce mixture into the skillet with the cooked pork. Stir well to combine and bring to a simmer. Allow the sauce to thicken slightly.

6. Add the cooked noodles to the skillet and toss to coat the noodles evenly with the sauce.

7. Taste and adjust seasoning as needed, adding more chili oil for extra spice or soy sauce for saltiness.
