Instructions: 1. In a small bowl, whisk together soy sauce, rice vinegar, ketchup, honey, and cornstarch to make the sauce. Set aside. 2. Heat vegetable oil in a large skillet or wok over medium-high heat. 3. Add the shrimp to the skillet and cook until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside. 4. In the same skillet, add the garlic and ginger. Cook for about 30 seconds until fragrant. 5. Add the sliced bell peppers and onion to the skillet. Stir-fry for a few minutes until the vegetables are slightly tender. 6. Pour the sauce into the skillet and bring it to a simmer. Cook for a few minutes until the sauce thickens slightly. 7. Add the cooked shrimp and pineapple chunks to the skillet. Stir well to coat everything in the sauce. 8. Season with salt and pepper to taste. 9. Serve the Sweet and Sour Shrimp Stir-Fry hot over cooked rice.
