Ingredients: - 4 large eggs - 1/2 cup cooked chicken, shrimp, ham, or a combination of these proteins, diced - 1/2 cup bean sprouts - 1/4 cup finely chopped green onions - 1/4 cup finely chopped bell peppers (any color) - 1/4 cup finely chopped mushrooms - 2 tablespoons soy sauce - 1 tablespoon oyster sauce - 1 teaspoon sesame oil - Salt and pepper, to taste - Cooking oil for frying

Instructions:

1. In a medium-sized bowl, whisk the eggs until well beaten.

2. Add the diced protein (chicken, shrimp, ham), bean sprouts, green onions, bell peppers, mushrooms, soy sauce, oyster sauce, sesame oil, salt, and pepper to the beaten eggs. Mix all the ingredients together until well combined.

3. Heat a non-stick skillet or frying pan over medium heat and add a little cooking oil to coat the surface.

4. Scoop about 1/4 cup of the egg mixture and pour it onto the skillet, shaping it into a round patty. You can make multiple patties at once depending on the size of your skillet.

5. Cook each patty for about 3-4 minutes on one side until it is golden brown and set. Carefully flip the patty over and cook for an additional 2-3 minutes on the other side until fully cooked through.

6. Remove the cooked Egg Foo Young patties from the skillet and place them on a serving plate lined with paper towels to absorb any excess oil.

7. Repeat the process with the remaining egg mixture until all the patties are cooked.

8. Serve the Egg Foo Young hot with a side of steamed rice and drizzle with additional soy sauce or oyster sauce if desired.
