  • 1 pound of medium shrimp, peeled and deveined

  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil (optional)
  • 1 teaspoon sugar
  • 2 green onions, chopped
  • Salt and pepper, to taste

Instructions:

Step 1: Prepare the Marinade

In a medium bowl, combine the soy sauce, minced ginger, minced garlic, and sugar. Mix well. Add the shrimp to the marinade and let it sit for about 15-20 minutes to absorb the flavors.

Step 2: Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat. If you like a richer flavor, add sesame oil to the skillet once it’s hot.

Step 3: Cook the Shrimp

Once the oil is shimmering, add the marinated shrimp to the skillet. Be sure to include the marinade for extra flavor. Cook the shrimp for about 2-3 minutes on one side until they turn pink, then flip them over and cook for an additional 2 minutes. Avoid overcooking to keep the shrimp tender.

Step 4: Add Green Onions

As the shrimp is nearly done, stir in the chopped green onions. They add a fresh crunch and vibrant color to the dish. Cook for another minute until the green onions are slightly wilted.

Step 5: Season and Serve

Taste the shrimp and season with salt and pepper as needed. Once cooked, remove the skillet from heat. Serve your delicious Chinese shrimp with soy sauce and ginger over cooked rice or noodles for a complete meal.
