How to Cook Chinese Greens with Tofu

Chinese greens, known for their vibrant colors and nutritional benefits, are a staple in many Asian cuisines. When paired with tofu, they create a dish that is not only healthy but also packed with flavor. Below is a simple guide on how to cook Chinese greens with tofu, ensuring a delightful meal every time.

Ingredients

  • 200g of tofu (firm or extra-firm)
  • 250g of Chinese greens (bok choy, Chinese broccoli, or gai lan)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce (or vegetarian alternative)
  • 2 cloves of garlic, minced
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Optional: Sesame oil for drizzling

Instructions

Step 1: Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel or paper towels and place a heavy object on top for about 15-20 minutes. This will help achieve a crispier texture once cooked.

Step 2: Cut the Tofu

Once pressed, cut the tofu into bite-sized cubes. This will allow for even cooking and better absorption of flavors during the stir-frying process.

Step 3: Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat. Ensure the oil is hot enough before adding the tofu to achieve a gorgeous golden-brown color.

Step 4: Fry the Tofu

Add the tofu cubes to the hot oil in a single layer. Let them cook undisturbed for about 3-4 minutes, or until the bottoms are golden. Flip the tofu and cook on all sides until they're uniformly crispy. Remove the tofu from the pan and set aside.

Step 5: Sauté the Garlic

In the same skillet, add a bit more oil if necessary and toss in the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 6: Cook the Chinese Greens

Add the Chinese greens to the skillet, stirring frequently. Cook them for about 2-4 minutes, or until they become bright green and tender but still crisp.

Step 7: Combine and Season

Return the crispy tofu to the skillet with the greens. Pour in the soy sauce and oyster sauce, and mix well so that all ingredients are coated evenly. Allow everything to cook together for another 1-2 minutes, letting the flavors meld.

Step 8: Adjust Seasoning

Taste the dish and adjust the seasoning with salt and pepper if necessary. For an extra touch, drizzle a few drops of sesame oil over the dish before serving.

Serving Suggestions
