  • 1 block of firm tofu
  • 4 cups of vegetable broth or water
  • 1 cup of sliced mushrooms (shiitake or button mushrooms work well)
  • 1 cup of chopped bok choy or spinach
  • 1 cup of sliced carrots
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green onions, chopped

Instructions

Step 1: Prepare the Tofu

Start by pressing the firm tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into cubes.

Step 2: Sauté the Aromatics

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant. Be careful not to burn them.

Step 3: Add Vegetables

Add the sliced carrots, mushrooms, and bell pepper to the pot. Sauté the vegetables for about 5 minutes, allowing them to soften slightly.

Step 4: Prepare the Soup Base

Pour in the vegetable broth (or water) and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.

Step 5: Incorporate Tofu and Greens

Add the tofu cubes, bok choy (or spinach), and soy sauce to the pot. Let the soup simmer for another 5-10 minutes, allowing the flavors to meld together and the greens to wilt.

Step 6: Season and Serve

Season the soup with salt and pepper to taste. Before serving, stir in the chopped green onions. Ladle the soup into bowls and garnish with fresh herbs like cilantro or basil for added flavor.
