How to Cook Chinese-style Stir-Fried Tofu and Zucchini

Cooking a delicious Chinese-style stir-fried tofu and zucchini dish is both easy and satisfying. This healthy recipe is perfect for a quick weeknight dinner or a meal prep option for your busy week. Ingredients

  • 1 block of firm tofu (14 oz), drained and pressed
  • 2 medium zucchinis, sliced into half-moons
  • 2 tablespoons vegetable oil (or sesame oil for added flavor)
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons soy sauce (low sodium, if preferred)
  • 1 tablespoon oyster sauce (or vegan version)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)
  • Salt and pepper to taste
  • Green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

Step 1: Prepare the Tofu

Start by draining the tofu and wrapping it in a clean kitchen towel. Place a heavy object on top to press out excess moisture for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Stir-Fry the Tofu

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. When the oil is hot, carefully add the tofu cubes in a single layer. Let them cook for about 3-4 minutes until golden-brown on one side before flipping to cook the other sides. This should take about 10 minutes overall. Once browned, remove the tofu from the skillet and set aside.

Step 3: Sauté Garlic and Ginger

In the same skillet, add another tablespoon of oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Be careful not to burn them.

Step 4: Cook the Zucchini

Add the sliced zucchini to the skillet and stir-fry for about 5-7 minutes, or until they are tender yet still slightly crisp. You can season them with a pinch of salt and pepper during cooking.

Step 5: Combine Tofu and Sauces

Once the zucchini is cooked, return the tofu to the skillet. Drizzle the soy sauce and oyster sauce over the tofu and zucchini, stirring well to combine. If you'd like a thicker sauce, add the cornstarch mixture and stir until the sauce coats all the ingredients evenly.

Step 6: Garnish and Serve

Once everything is heated through, remove the skillet from the heat. Garnish your stir-fried tofu and zucchini with sliced green onions and sesame seeds for a beautiful presentation. Serve with steamed rice or noodles for a complete meal.
