  • 2 inches ginger, sliced

Instructions

Step 1: Prepare the Lobster

Start by filling a large pot with water and bringing it to a boil. If desired, you can add some salt to the water. Carefully add the live lobsters, making sure they are fully submerged. Boil the lobsters for about 8-10 minutes until they turn bright red. Remove them from the water and allow them to cool. Once cooled, split the lobsters in half lengthwise to prepare them for cooking.

Step 2: Make the Spicy Soy Sauce

In a small bowl, mix together the soy sauce, oyster sauce, chili paste, and sesame oil. Stir until well combined. Set this spicy sauce aside for later use.

Step 3: Cooking the Lobster

Heat a large skillet or wok over medium heat. Add the minced garlic and sliced ginger, sautéing for about 1-2 minutes until fragrant. Be careful not to burn the garlic as it can become bitter.

Next, carefully place the lobster halves cut-side down into the skillet. Sear them for about 3-4 minutes to develop a nice crust. Then, flip the lobsters over to the shell side.
