How to Make Chinese Lobster with Sweet Chili Oil

  • 1 whole live lobster (about 1.5-2 pounds)
  • 3 tablespoons of sweet chili oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of rice wine or sherry
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

Step 1: Prepare the Lobster

Start by placing the live lobster in the freezer for 15-20 minutes. This will sedate the lobster, making it easier to handle. Once sedated, take it out and rinse it under cold water.

Step 2: Boil the Lobster

In a large pot, bring salted water to a rolling boil. Carefully add the lobster to the pot and cover. Boil the lobster for about 8-10 minutes, or until the shell turns vibrant red. Once cooked, remove the lobster and place it in ice water to stop the cooking process.

Step 3: Prepare the Sweet Chili Sauce

In a small bowl, mix together the sweet chili oil, minced garlic, minced ginger, soy sauce, sesame oil, and rice wine. This mixture will be the key to flavoring your lobster.

Step 4: Cut the Lobster

Once the lobster has cooled, place it on a cutting board. Using kitchen scissors or a sharp knife, carefully cut the lobster in half lengthwise. Remove any tomalley (the green substance) and rinse the lobster under cold water to remove any impurities.

Step 5: Sauté the Lobster

In a large skillet over medium heat, add the sweet chili mixture. Place the lobster halves in the skillet, flesh side down. Sauté for about 3-4 minutes, allowing the flavors to absorb. Flip the lobster over, and cook for an additional 3-4 minutes, drizzling any remaining sauce over the top.

Step 6: Garnish and Serve

Once the lobster is cooked through and coated in the flavorful sauce, transfer it to a serving platter. Garnish with chopped green onions and fresh cilantro. Serve with lemon wedges on the side for an extra burst of flavor.
