  • 2 medium sweet potatoes, peeled and diced
  • 200 grams firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or a vegetarian alternative)
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish (optional)

Instructions

Step 1: Prepare the Sweet Potatoes and Tofu

Start by peeling and dicing the sweet potatoes into bite-sized cubes. This ensures they cook evenly. Next, cut the firm tofu into cubes and set aside. Pat the tofu dry with paper towels to remove excess moisture, which helps it absorb the flavors during cooking.

Step 2: Sauté Garlic and Ginger

In a large skillet or wok, heat the vegetable oil over medium heat. Once the oil is hot, add the minced garlic and grated ginger. Sauté for about 30 seconds or until fragrant, stirring frequently to avoid burning.

Step 3: Cook the Sweet Potatoes

Add the diced sweet potatoes to the skillet. Stir-fry for about 5 minutes, ensuring they are well-coated with the garlic and ginger. This enhances the flavor of the dish. Once the sweet potatoes are cooked, gently fold in the cubed tofu. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and ground black pepper. Pour this sauce over the sweet potatoes and tofu, stirring carefully to combine without breaking the tofu. Cook for another 3-5 minutes to allow the tofu to warm through and absorb the sauce.
