Instructions

Step 1: Preparing the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the block of tofu in a clean kitchen towel and place a heavy object on top, such as a cast-iron skillet. Let it sit for about 15-20 minutes.

Step 2: Cutting and Marinating

Once pressed, cut the tofu into bite-sized cubes. In a medium bowl, toss the tofu with cornstarch, a pinch of salt, and pepper. This will give the tofu a nice crispy texture when fried.

Step 3: Cooking the Eggplant

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the eggplant and stir-fry for about 5-7 minutes until it becomes tender and starts to caramelize. Remove the eggplant from the skillet and set aside.

Step 4: Frying the Tofu

Step 5: Combining Ingredients

With the tofu and eggplant prepared, add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant. Return the cooked eggplant and tofu to the skillet.

Step 6: Adding Sauces

Pour in the soy sauce and oyster sauce, tossing everything to combine. Stir-fry for another minute to let the flavors meld together. Drizzle with sesame oil and give a final toss.

Step 7: Serving

Transfer the stir-fried tofu, eggplant, and garlic to a serving dish. Garnish with chopped green onions for a fresh touch. This dish pairs perfectly with steamed rice or noodles.
