How to Cook Chinese-style Stir-Fried Mushrooms with Tofu and Spinach

Cooking up a delicious dish of Chinese-style stir-fried mushrooms with tofu and spinach is an easy way to enjoy a flavorful and nutritious meal. This recipe balances the earthy flavor of mushrooms, the protein-packed goodness of tofu, and the vibrant freshness of spinach. Follow these simple steps to create a delightful dish that can be served as a main course or a side.

Ingredients:

  • 200g firm tofu, diced
  • 250g mixed mushrooms (shiitake, button, or oyster), sliced
  • 150g fresh spinach, washed and drained
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional for flavor)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Spring onions and sesame seeds for garnish (optional)

Instructions:

Step 1: Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Cook the Tofu

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced tofu and sauté until golden brown on all sides, approximately 5-7 minutes. Remove the tofu from the pan and set it aside.

Step 3: Stir-Fry the Mushrooms

In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the minced garlic and ginger and sauté for about 30 seconds until fragrant. Add the sliced mushrooms to the skillet and stir-fry for about 5-6 minutes, or until the mushrooms are tender.

Step 4: Incorporate the Spinach

Once the mushrooms are cooked through, add the fresh spinach to the skillet. Stir-fry for an additional 2-3 minutes, just until the spinach is wilted.

Step 5: Combine Ingredients

Add the cooked tofu back to the skillet with the vegetables. Pour in the soy sauce and oyster sauce (if using) and mix everything gently to combine. Cook for another 2 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper to taste.

Step 6: Finishing Touches

Drizzle with sesame oil for added flavor. Serve hot, garnished with chopped spring onions and sesame seeds if desired.
