Chinese-style stir-fried zucchini and tofu with garlic is a delicious and healthy dish that can elevate your weeknight dinners. This simple recipe allows you to enjoy a burst of flavors while keeping your meal nutritious. Follow the steps below to create this delightful dish.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 block of firm tofu, drained and cubed
  • 4 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of ginger, grated
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

Step 1: Prepare the Tofu

To start, press the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. This step helps the tofu absorb more flavors during cooking.

Step 2: Sauté the Tofu

In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and cook until it is golden brown on all sides, which should take about 8-10 minutes. Once browned, remove the tofu from the pan and set it aside.

Step 3: Cook the Vegetables

In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and grated ginger, stirring quickly to avoid burning (about 30 seconds). Then, add the sliced zucchinis and stir-fry for about 5 minutes until they start to soften but still retain some crunch.

Step 4: Combine Ingredients

Returning the cooked tofu to the skillet, drizzle the soy sauce and sesame oil over the tofu and zucchini mixture. Gently toss everything together to ensure the flavors meld. Season with salt and pepper to taste, and stir-fry for an additional 2-3 minutes.

Step 5: Serve

Once everything is cooked to perfection, remove the stir-fry from heat. Garnish with chopped green onions for a fresh finish. Serve hot over steamed rice or alongside your favorite grain for a complete meal.

Tips for the Best Stir-Fried Zucchini and Tofu

  • For extra flavor, consider adding a splash of rice vinegar or a pinch of chili flakes for heat.
