4. Bulk Fermentation

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for about 4-6 hours. Every 30 minutes, give the dough a stretch and fold to build strength.

5. Shaping the Dough

Once the dough has roughly doubled in size, turn it out onto a lightly floured surface. Gently shape the dough into a round or oval loaf, being careful not to deflate it too much.

6. Second Rise

Place the shaped dough into a proofing basket (banneton) seam side up. Cover it with a cloth and let it rise for another 2-3 hours at room temperature or overnight in the fridge for more complex flavors.

7. Preheating the Oven

Preheat your oven to 450°F (230°C) about 30 minutes before you plan to bake. Place a Dutch oven or baking stone inside to heat up.

8. Scoring the Bread

Before placing the dough in the oven, carefully turn it out onto a piece of parchment paper. Using a sharp blade, score the top of the dough. This allows the bread to expand while baking.

9. Baking

Carefully transfer the dough (with parchment) into the preheated Dutch oven. Cover it with the lid and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until the crust is golden brown.

10. Cooling the Bread

Once baked, remove the bread from the oven and let it cool on a wire rack for at least an hour. This allows the crumb to set properly.
