Cooking Chinese-style stir-fried tofu with peppers and mushrooms is a delightful way to enjoy a healthy, plant-based meal. Ingredients

  • 1 block of firm tofu
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup of mushrooms, sliced (such as shiitake or button mushrooms)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Optional: sliced scallions and sesame seeds for garnish

Instructions

Step 1: Prepare the Tofu

Start by pressing the block of firm tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a weight on top (like a heavy pan) for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Marinate the Tofu

In a bowl, combine 1 tablespoon of soy sauce and cornstarch. Add the tofu cubes and gently toss until they are evenly coated. This will help to create a crispy texture once stir-fried.

Step 3: Stir-Fry the Tofu

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu cubes and cook for about 5-7 minutes, turning occasionally until they are golden and crispy. Remove the tofu from the skillet and set aside.

Step 4: Sauté the Vegetables

In the same skillet, add the remaining tablespoon of oil. Once hot, add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Then, add the sliced bell peppers and mushrooms. Stir-fry the vegetables for about 5 minutes or until they are tender-crisp.

Step 5: Combine and Season

Return the crispy tofu to the skillet with the vegetables. Pour in the remaining soy sauce, and stir well to combine all the ingredients. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Step 6: Serve

Once everything is heated through, remove the skillet from the heat. Serve your Chinese-style stir-fried tofu with peppers and mushrooms over cooked rice or noodles. Garnish with sliced scallions and sesame seeds if desired.
