  • 1 tablespoon soy sauce
  • Salt to taste

Instructions:

  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Add the bok choy to the wok, tossing to coat.
  4. Stir-fry for 3-5 minutes or until the bok choy is tender but still crisp.
  5. Pour in the soy sauce and season with salt. Stir well and serve hot.

2. Szechuan-Style Stir-Fried Mixed Vegetables

Ingredients:

  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons Szechuan sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon ginger, minced

Instructions:

  1. Heat the vegetable oil in a large skillet over high heat.
  2. Add the ginger and stir-fry for a minute.
  3. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 5 minutes until the vegetables are vibrant and tender.
  4. Stir in the Szechuan sauce and cook for another 2 minutes. Serve immediately with steamed rice.

3. Tofu and Vegetable Stir-Fry

Ingredients:

  • 1 block of firm tofu, cubed
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch (optional)

Instructions:

  1. In a skillet, heat the sesame oil over medium heat and add the cubed tofu. Cook until golden brown on all sides.
  2. Remove the tofu and set aside. In the same skillet, add garlic and stir-fry for about 30 seconds.
  3. Incorporate the mixed vegetables and cook for 5-7 minutes until just tender.
  4. Add the tofu back into the skillet, pour in the soy sauce, and if desired, sprinkle cornstarch to thicken the sauce. Stir well and serve hot.

4. Cashew Stir-Fried Vegetables

Ingredients:

  • 1 cup cashews, unsalted
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a wok or skillet, heat the vegetable oil over medium-high heat.
  2. Add the cashews and fry for about 2 minutes until golden. Remove and set aside.
  3. Add broccoli and bell peppers to the wok; stir-fry for 4-5 minutes until tender-crisp.
  4. Return the cashews to the pan, add oyster sauce, salt, and pepper. Mix well and serve.
