How to Cook Chinese-style Vegetable Tofu Stew

Ingredients

  • 400g firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 200g mushrooms, sliced
  • 2 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

Step 1: Prepare the Tofu

Begin by draining the firm tofu and pressing it gently to remove excess moisture. Once drained, cut the tofu into bite-sized cubes.

Step 2: Cook the Tofu

In a large pot or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pot and set it aside.

Step 3: Sauté the Aromatics

In the same pot, add the remaining tablespoon of vegetable oil. Sauté the chopped onion for 2-3 minutes until it becomes translucent. Then, add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 4: Add the Vegetables

Next, incorporate the diced red and green bell peppers, sliced carrots, chopped zucchini, and mushrooms into the pot. Stir-fry the vegetables for about 5-7 minutes until they start to soften.

Step 5: Make the Broth

Pour in the vegetable broth and add the soy sauce and oyster sauce (if using). Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

Step 6: Thicken the Stew

Once the vegetables are tender, return the sautéed tofu to the pot. Stir in the cornstarch mixture to thicken the stew. Let it cook for another 2-3 minutes until the stew reaches the desired consistency.

Step 7: Season and Serve

Season the stew with salt and pepper to taste. Once everything is cooked through, remove it from heat and serve hot. Garnish with chopped green onions for an extra flavor boost.
