Instructions

Step 1: Prepare Your Ingredients

Start by washing and chopping your mushrooms and bok choy. If you’re using shiitake mushrooms, remove the stems as they can be tough. For button or portobello mushrooms, simply slice them into thick pieces.

Step 2: Heat the Oil

In a large wok or skillet, heat the vegetable oil over medium-high heat. You want the oil hot but not smoking.

Pour the soy sauce and oyster sauce (if using) over the vegetables. Mix well to coat everything evenly. Drizzle with sesame oil for added flavor. Season with salt and pepper to taste, adjusting as necessary according to your preference.

Once everything is cooked to your liking, remove the skillet from the heat. Transfer the stir-fried mushrooms and bok choy to a serving dish and garnish with chopped green onions.
