Instructions

Step 1: Prepare the Eggplant

Start by washing the eggplants thoroughly under running water. Cut the eggplants into bite-sized pieces, either in half lengthwise or into thicker rounds depending on your preference.
It's essential to sprinkle a little salt on the eggplant pieces and let them sit for about 15-20 minutes. This process helps to draw out excess moisture and bitterness.

Step 2: Make the Garlic Sauce
