Instructions

Step 1: In a large pot, heat a splash of vegetable broth over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Step 2: Add the sliced mushrooms, julienned carrots, and bamboo shoots to the pot. Stir and cook for about 5-7 minutes until the vegetables start to soften.
