How to Make Authentic French Madeleines

Madeleines are delicate, shell-shaped sponge cakes that originate from France, celebrated for their buttery flavor and airy texture. Making authentic French madeleines at home is a delightful experience, and with the right ingredients and techniques, you can achieve the perfect treat. Follow this simple recipe to create your own batch of authentic French madeleines.

Ingredients

To make authentic French madeleines, you will need the following ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 2 large eggs
  • 2/3 cup (130g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • Zest of one lemon (optional, for a citrus note)

Instructions

1. Prepare the Madeleine Pans

Start by preheating your oven to 375°F (190°C). Grease your madeleine pans with butter and dust with flour to prevent sticking. Ensure you tap out any excess flour.

2. Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt. This combination of dry ingredients will help create a light, fluffy texture in your madeleines.

3. Beat the Eggs and Sugar

In a large mixing bowl, use an electric mixer to beat the eggs and granulated sugar until the mixture becomes thick and pale, roughly 5-7 minutes. You want to achieve a consistency similar to that of a soft ribbon.

4. Combine Wet Ingredients

Next, gently fold in the melted butter, vanilla extract, and lemon zest (if using) into the egg mixture. Ensure the butter is not too hot, as it can cook the eggs.

5. Incorporate Dry Ingredients

Carefully fold the dry ingredient mixture into the wet mixture, taking care not to deflate the airy texture you have created. The batter should be smooth and thick.

6. Fill the Madeleines Molds

Using a spoon or a piping bag, fill each mold of the madeleine tray about three-quarters full. The batter will rise during baking, so avoid overfilling.

7. Bake the Madeleines

Bake in the preheated oven for about 10-12 minutes or until they are golden brown around the edges and a toothpick comes out clean from the center. The signature hump on the madeleine is a sign of a well-made cake.

8. Cool and Serve

Once baked, remove the madeleines from the oven, allow them to cool in the pan for a minute, then gently transfer them to a wire rack to cool completely. Serve them warm, dusted with powdered sugar, or enjoy them plain with a cup of tea or coffee.

Tips for Perfect Madeleines

  • Chill the batter: Allow the batter to rest in the fridge for at least 30 minutes before baking. This helps develop the classic madeleine "hump."
  • Experiment with flavors: Feel free to add other flavors, such as almond extract or different citrus zests, to customize your madeleines.
  • Store properly: Madeleines are best enjoyed fresh but can be stored in an airtight container for a few days. To revive them, lightly warm them in the oven before serving.

With this recipe, you can easily create authentic French madeleines that are sure to impress both family and friends. Enjoy the baking process and the delightful flavors of these classic treats!
