How to Make Chinese-style Cucumber and Tofu Salad

Chinese-style cucumber and tofu salad is a refreshing dish that combines the crispness of cucumbers with the delicate texture of tofu. This salad is not only simple to prepare but also packed with nutrients, making it a perfect appetizer or side dish for any meal. Here’s how to make this delightful salad in just a few easy steps.

Ingredients

  • 2 medium cucumbers
  • 1 block (about 14 oz) firm tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 garlic cloves, minced
  • 1 tablespoon sesame seeds (optional)
  • Chopped cilantro or green onions for garnish

Instructions

Step 1: Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Place the tofu block on a plate, cover it with another plate, and weigh it down with something heavy for about 15-20 minutes. After pressing, cut the tofu into bite-sized cubes.

Step 2: Prepare the Cucumbers

While the tofu is being pressed, wash the cucumbers thoroughly. Slice them in half lengthwise and then cut them into half-moon shapes. You can remove the seeds if you prefer a crunchier texture.

Step 3: Make the Dressing

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and minced garlic. Mix until the sugar dissolves completely. This dressing will add a burst of flavor to your salad.

Step 4: Combine the Ingredients

In a large mixing bowl, combine the cucumber slices and tofu cubes. Pour the dressing over the top and gently toss everything together. Be careful not to break the tofu pieces while mixing.

Step 5: Add Final Touches

If you like a bit of crunch, sprinkle sesame seeds over the salad. Garnish with chopped cilantro or green onions for an added layer of flavor and color.

Step 6: Chill and Serve

For the best taste, refrigerate the salad for about 30 minutes before serving. This allows the flavors to meld beautifully. Serve chilled as a refreshing appetizer or side dish.

Tips

  • For added spice, consider including a dash of chili oil or a sprinkle of red pepper flakes to the dressing.
  • If you want to enhance the salad's flavor, try adding a splash of fresh lime or lemon juice.
  • Make this dish ahead of time for easy meal prep. It stays fresh in the refrigerator for up to three days.

Enjoy your homemade Chinese-style cucumber and tofu salad, a perfect blend of flavors that will please your taste buds and impress your friends and family!
