  • 1 tablespoon sesame oil

Instructions

Step 1: Prepare the Tofu

Start by draining the firm tofu and pressing it to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Sauté the Tofu

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides, which should take about 5-7 minutes. Remove the tofu from the skillet and set it aside on a plate.

Step 3: Cook the Vegetables

In the same skillet, add another tablespoon of vegetable oil if needed. Add the minced garlic and ginger, sautéing for about 30 seconds or until fragrant. Then, add the sliced mushrooms and cook for about 5 minutes, until they have softened and released their moisture.

Step 4: Add the Spinach

Add the fresh spinach to the skillet and stir-fry until it wilts, which should take about 2-3 minutes. If you prefer a more tender texture, you can cover the skillet for a minute.

Step 5: Combine Tofu and Season

Return the cooked tofu to the skillet with the vegetables. Pour in the soy sauce and sesame oil, mixing everything well to combine. If you'd like a thicker sauce, dissolve the cornstarch in a tablespoon of water, add it to the skillet, and stir until the sauce thickens. Season with salt and pepper to taste.

Step 6: Serve
