Instructions

Step 1: Prepare the Tofu

Begin by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes. After pressing, cut the tofu into 1-inch cubes.

Step 2: Marinate the Tofu

In a bowl, combine the soy sauce, oyster sauce, and cornstarch. Gently toss the tofu cubes in the marinade until well coated. Let them sit for about 10 minutes to absorb the flavors.

Step 3: Sauté Vegetables

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and bell peppers, stirring-fry for 3-4 minutes until they are slightly softened.

Add the minced garlic and ginger, and sauté for another minute until fragrant. Next, toss in the sliced mushrooms and continue to cook until they are tender, about 5 minutes.

Step 4: Cook the Tofu

Push the vegetables to one side of the skillet and add the marinated tofu cubes to the other side. Let the tofu cook without stirring for about 3-4 minutes until it develops a golden crust. Carefully flip the tofu to brown on all sides.

Step 5: Add Black Beans and broth

Once the tofu is golden, stir in the chopped fermented black beans. Pour in the vegetable broth or water, and bring the mixture to a simmer. Allow it to cook for an additional 5 minutes, letting the flavors meld together.

Step 6: Serve

Once the dish is well combined, taste and adjust the seasoning with salt and pepper if needed. Remove from heat and serve the tofu and mushrooms in black bean sauce hot over steamed rice or alongside noodles.
