  • 2 tablespoons cold water
  • 12 ounces dark chocolate (at least 60% cocoa), chopped
  • 1 cup heavy cream
  • 3 tablespoons unsalted butter

Instructions

1. Prepare the Tart Shell

Begin by making the tart shell. In a large mixing bowl, combine the all-purpose flour, cocoa powder, powdered sugar, and salt. Whisk the dry ingredients together until fully incorporated.

Next, add the cold, cubed butter to the bowl. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and cold water. Add this mixture to the dry ingredients and mix until the dough comes together. If necessary, add a little more water, one teaspoon at a time, until the dough forms a smooth ball.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This step ensures that the tart shell holds its shape while baking.

2. Bake the Tart Shell

Preheat your oven to 350°F (175°C). Once the dough is chilled, roll it out on a floured surface to about ¼ inch thick. Carefully transfer the rolled dough into a 9-inch tart pan, pressing it gently into the edges and trimming any excess.

To prevent the shell from puffing up during baking, line it with parchment paper and fill it with pie weights or dried beans. Bake in the preheated oven for 15 minutes. After this, remove the weights and parchment, and bake for an additional 10-12 minutes until the shell is set. Allow it to cool completely.

3. Make the Chocolate Truffle Filling

In a saucepan, heat the heavy cream over medium heat until just simmering. Pour the hot cream over the chocolate and let it sit for 2-3 minutes. This process helps melt the chocolate evenly.
