How to Make Traditional Danish Æbleskiver (Pancake Balls)

Æbleskiver are delightful Danish treats that resemble small pancake balls, traditionally enjoyed during the winter months, especially around Christmas. This beloved dish is fairly simple to prepare, and with the right recipe, you can bring a taste of Denmark to your kitchen. Here’s how to make traditional Danish æbleskiver.

Ingredients Needed

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Apple slices or jam for filling (optional)
  • Powdered sugar for dusting

Equipment Required

  • Æbleskiver pan
  • Mixing bowls
  • Whisk
  • Spatula or skewer for turning

Instructions

Step 1: Prepare the Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract. Combine the wet and dry ingredients, mixing until just blended. Do not overmix; a few lumps are perfectly fine.

Step 2: Heat the Æbleskiver Pan

Preheat your æbleskiver pan over medium heat. Make sure it is hot before adding any batter. Lightly grease the pan with a bit of butter to prevent sticking.

Step 3: Fill the Pan

Pour about a tablespoon of batter into each mold, filling them halfway. If you’re using apple slices or jam, add a small piece or a spoonful into the center of the batter before covering it with more batter. Fill the molds nearly to the top.

Step 4: Cook the Æbleskiver

Let the batter cook for about 2-3 minutes, or until the edges start to set and the bottoms are golden brown. Using a skewer or a fork, carefully flip each æbleskiver over to cook the other side. Cook for another 2-3 minutes until they are golden all around.

Step 5: Serve and Enjoy

Once cooked, remove the æbleskiver from the pan and place them on a serving platter. Dust them with powdered sugar. Serve warm, along with syrup, jam, or apple slices for dipping.

Tips for Perfect Æbleskiver

  • Experiment with fillings such as raspberry jam, Nutella, or even cheese for a savory version.
  • Ensure the pan is sufficiently heated for a good golden crust.
  • Do not rush the flipping process; give each side enough time to cook thoroughly.

Traditional Danish æbleskiver are a sweet treat that brings joy to any gathering. With this simple recipe, you can enjoy making and sharing these delicious pancake balls with family and friends. Happy cooking!
