How to Make Traditional Portuguese Pastéis de Nata

Ingredients

To make 12 servings of Pastéis de Nata, you will need the following ingredients:

  • 1 package of puff pastry (store-bought for convenience)
  • 1 cup of whole milk
  • 1 cup of heavy cream
  • 3/4 cup of granulated sugar
  • 1/4 cup of all-purpose flour
  • 6 large egg yolks
  • 1/2 teaspoon of vanilla extract
  • 1 stick of cinnamon
  • Peel of 1 lemon (preferably organic)
  • Ground cinnamon and powdered sugar for dusting

Instructions

Prepare the Pastry

1. Preheat your oven to 475°F (245°C).
2. Roll out the puff pastry on a lightly floured surface until it’s thin, then cut it into circles (about 4 inches in diameter).
3. Place the pastry circles into a muffin tin, pressing them into the bottom and up the sides. Use a fork to poke holes in the base to prevent it from puffing up too much while baking.

Make the Custard Filling

4. In a medium saucepan, combine the milk, heavy cream, sugar, and cinnamon stick. Heat over medium until it simmers, stirring occasionally.
5. In a separate bowl, whisk together the flour and egg yolks until smooth.
6. Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent curdling.
7. Strain the mixture through a fine sieve into another saucepan to remove any lumps and the cinnamon stick. Add the lemon peel and heat gently, stirring continuously until the mixture thickens slightly (about 5 minutes). Remove from heat and add the vanilla extract.

Assemble and Bake

8. Pour the custard filling into the prepared pastry shells, filling them about 3/4 full.
9. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and slightly caramelized. Keep an eye on them to avoid burning.
10. Once baked, remove the Pastéis de Nata from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Serving Suggestions

Pastéis de Nata are best enjoyed warm or at room temperature. Dust them with powdered sugar and a sprinkle of ground cinnamon before serving for an added touch. Pair them with a cup of coffee or tea for the ultimate indulgence.
