  • 1 block firm tofu, cubed
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons doubanjiang (spicy bean paste)
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch mixed with water (for thickening)
  • Green onions for garnish

Instructions:

  1. Heat the vegetable oil in a pan over medium heat. Add garlic and ginger, sautéing until fragrant.
  2. Add doubanjiang and stir for a minute to release its flavor.
  3. Add the cubed tofu, vegetable broth, and soy sauce. Stir gently to coat the tofu.
  4. Simmer for 5-7 minutes. If the sauce needs thickening, add the cornstarch mixture gradually until the desired consistency is reached.
  5. Remove from heat, garnish with chopped green onions, and serve with rice.

4. Vegetable Fried Rice

  • 2 cups cooked rice (preferably day-old)
