How to Make Chinese-style Tofu and Vegetable Stir-Fry with Mushrooms

Chinese-style tofu and vegetable stir-fry with mushrooms is a delightful dish that's both nutritious and easy to make. It combines protein-packed tofu with a colorful mix of vegetables and earthy mushrooms, all tossed in a savory sauce. This recipe is perfect for a quick weeknight dinner or a wholesome meal prep option. Here’s how to prepare it.

Ingredients

  • 14 oz firm tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 1 cup mushrooms, sliced (shiitake or button mushrooms work great)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 tablespoon hoisin sauce
  • Sesame seeds for garnishing
  • Cooked rice or noodles for serving

Instructions

Step 1: Prepare the Tofu

Begin by cutting the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with soy sauce and cornstarch until evenly coated. This coating will give the tofu a nice crust and enhance its flavor during cooking.

Step 2: Sauté the Tofu

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes in a single layer, making sure not to overcrowd the pan. Cook for 4-5 minutes until golden brown on all sides. Remove the tofu from the pan and set aside.

Step 3: Cook the Vegetables

In the same pan, add the remaining tablespoon of vegetable oil. Once hot, add the garlic and ginger, stirring for about 30 seconds until fragrant. Add the broccoli, bell pepper, snap peas, and mushrooms. Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp.

Step 4: Combine Tofu and Sauce

Return the cooked tofu to the pan with the vegetables. Drizzle in the hoisin sauce, and stir everything together to ensure all ingredients are coated evenly. Cook for an additional 2-3 minutes until everything is heated through and the flavors meld.

Step 5: Serve

Remove from heat and transfer the stir-fry to a serving dish. Sprinkle with sesame seeds for an added crunch and nutty flavor. Serve hot over cooked rice or noodles for a complete meal.

Tips for Perfect Stir-Fry

  • Prep Ahead: Chop all vegetables and press the tofu in advance to save time during cooking.
  • Customize Your Vegetables: Feel free to use any seasonal vegetables you prefer, such as carrots, zucchini, or baby corn.
  • For Extra Flavor: Add a splash of sesame oil or a sprinkle of chili flakes for a spicy kick.

This Chinese-style tofu and vegetable stir-fry with mushrooms is a versatile dish that's not only delicious but also packed with nutrients. It's an excellent way to incorporate more plant-based meals into your diet while satisfying your taste buds!
